Montaje de una cenaduría* durante una noche en Estructuras 3000**

Construcción de una mesa de madera mientras cocinaba tlayudas***
Todos los ingredientes que componen a la tlayuda van dispuestos sobre la mesa; cada comensal prepara la tlayuda a su gusto. La tlayuda la hice con maiz morado, ésta funciona como un plato comestible, sobre ella se coloca la comida a convinar: frijol negro, setas o carne, lechuga, tomate, aguacate, cebolla y tomate, acompañado de salsa y crema ácida. Se come usando las manos, a mordidas.

*Cenaduría es fonda en la que se sirven comidas, especialmente de noche.

**Estructuras 3000 es un espacio de espacios dedicado al arte contemporáneo, ubicado en Hospitalet de Llobregat.

***Tlayuda es es una tortilla de maíz típica del estado de Oaxaca, en México. Suele tener un diámetro de 30 centímetros o más; se dora sobre un comal, lo que le brinda mayor dureza que a una tortilla convencional, con una consistencia quebradiza y correosa.

Assembly of a diner overnight in Structures 3000

Building a wooden table while cooking tlayudas **
All the ingredients that make up the tlayuda are arranged on the table; each diner prepares the tlayuda to their liking. I made the tlayuda with purple corn, this works as an edible plate, on it the food to be served is placed: black beans, mushrooms or meat, lettuce, tomato, avocado, onion and tomato, accompanied by sauce and sour cream. It is eaten using the hands, in bites.

* Cenaduría is an inn where meals are served, especially at night.

**Estructuras 3000 is a space of spaces dedicated to contemporary art, located in Hospitalet de Llobregat.

** Tlayuda is a typical corn tortilla from the state of Oaxaca, in Mexico. It usually has a diameter of 30 centimeters or more; it is browned on a comal, which gives it greater hardness than a conventional tortilla, with a brittle and leathery consistency.

CHICHIMECA
Es paisaje gastronómico sobre el semidesierto Zacatecano*

*Zacatecas es el último de los 32 estados del territorio Mexicano, Ubicado en el centro norte del país, conocido por su tradición minera y agricultura de frijol, maíz y tuna.
La mayor parte de su territorio tiene clima árido, semidesértico.
Antes de la conquista española el territorio que ahora es Zacatecas era conocido como La gran Chichimeca, Habitado por distintas tribus guerreras e indomables, de cultura nómada, recolectoras de frutos silvestres y agricultura de temporal. La vida seminomada de los chichimecas estaba regulada por movimientos estacionales propios, guiados por los ciclos naturales.

La comida tradicional está marcada por el tipo de vegetación de la zona y por el uso del maiz y el chile.

"Chichimeca" proviene del nahuatl Chichimecatl, chichi-perrx y mecatl-cuerda. Conocidos como Perrxs indomables, sus principales valores fueron la resistencia a conquista espiritual y material.

It is a gastronomic landscape on the Zacatecan semi-desert *

* Zacatecas is the last of the 32 states of the Mexican territory, located in the north center of the country, known for its mining tradition and agriculture of beans, corn and prickly pear.
Most of its territory has an arid, semi-desert climate.
Before the Spanish conquest, the territory that is now Zacatecas was known as La gran Chichimeca, inhabited by different warrior and indomitable tribes, of nomadic culture, gatherers of wild fruits and rainfed agriculture. The semi-nomadic life of the Chichimecas was regulated by their own seasonal movements, guided by natural cycles.

Traditional food is marked by the type of vegetation in the area and by the use of corn and chili.

"Chichimeca" comes from the Nahuatl Chichimecatl, chichi-perrx and mecatl-Cuerda. Known as indomitable dogs, their main values were resistance to spiritual and material conquest

Sesión de “traje”* para compartir comida. Los saberes, así como la comida, se comparten y se intercambian.
3ra Práctica de generosidad reflexiva, un pic nic en la Plaça Ramón Calsina, debajo de la TORRE DE AGUAS DEL BESÒS.

*Una comida de traje es como se conoce a una comida popular en la cual los participantes aportan los alimentos que se van a consumir.

Participantes de la Comida de traje y platillo que “trajeron pa’ compartir”, la mayor parte de los comensales fueron también cocineros.
